Coconut bacon

Thin strips of vegan bacon perfect for a BLT. Also works well as a garnish for splitpea soup.

Ingredients

  • 1 tbsp coconut oil
  • 1/4 cup boiling water
  • 1/4 cup tamari
  • 1 tbsp liquid smoke
  • 1/2 tsp garlic powder
  • 1/4 cup maple syrup
  • 1.5 tsp salt
  • 1.5 cups dried coconut flakes

Preparation

  • Start preheating the over to 175 C
  • Put the coconut oil and boiling water in a mixing bowl
  • Let the coconut oil melt
  • Mix in the other marinade ingredients
  • Add the coconut flakes
  • Pour in an oven dish and spread evenly
  • Bake at 175 C for 15 minutes
  • Stir
  • Bake at 150 C for 5 minutes
  • Stir
  • Bake at 150 C for 5 minutes
  • Remove from oven, stir and let cool down
  • Move to a sealable container and keep in the fridge
